Apple Walnut Muffins



Yields 12

½ cup granulated sugar
½ cup brown sugar
1 pinch salt
2 eggs
½ cup vegetable oil
2 teaspoons. Vanilla extract
½ teaspoon ground cinnamon
2 cups finely diced apples
1 cup coarsly chopped walnuts
2 ½ cups all purpose flour
2 teaspoons baking powder (Magic Baking Powder)
½ cup milk
sugar cinnamon

In a large bowl, beat sugar, salt, and eggs until light. Add oil, vanilla extract and cinnamon, and mix well. Fold in apples and walnuts. Add flour, baking powder, and milk, stirring just until blended.
Fill greased muffin tins and sprinkle each muffin with a little bit of sugar cinnamon. Bake for approx. 20 minutes in preheated oven, at 380°F or 180°C
